Violino di Capra is a special cold cut produced in Abruzzo and other areas. It is the most famous cold cut in goat meat manufacturing. Violino di Capra is a prosciutto made by maturing goat shoulder and leg, and it is named after his shape, similar to a violin (“violino” in Italian), with goat leg and shoulder being like violin fingerboard and belly, respectively. In some restaurants Violino di Capra is served by holding the prosciutto like a violin and using the knife as a violin bow.
