Mortadella di Campotosto, also known in Italy as “coglioni di mulo” (donkey’s balls), is a delicacy from the region of L’Aquila. Mortadella di Campotosto is made of pig meat, has a longish oval-shape with a white column of fat inside.
According to traditional processing methods, Mortadella di Campotosto is hung and exposed to wood smoke (oak or beech) for 15 days, then transferred in cellar to be cured for three months.
Mortadella di Campotosto is made during winter season and weighs 330 grams. It is dark red inside with a white column of fat.
