The truffle risotto is a great dish for truffle lovers. It is a very simple recipe and it will make a good impression with your guests.
Ingredients (4 people):
400 g rice
80 g black truffle Mangiabruzzo
1.5 l vegetable broth
50 g butter
4 spoons of extra virgin olive oil
Grated Parmesan cheese
Salt & pepper
Make 1.5 liter of hot vegetable broth.
In a large pan heat cooking oil and a little of butter over medium-high heat until hot. Add chopped or sliced onions and cook until tender. Add the rice and brown it. Add some splash of wine, and once the alcohol is evaporated, add some hot broth (so that the rice doesn’t dry out and cook evenly). Repeat until the rice is done. Before the rice is full cooked, add the rest of the butter and then the black truffle shaving. Finally add the Parmesan cheese, salt and pepper.
Truffle risotto is ready. Buon appetito!
